The 5 elements: earth, water, fire, air and ether are the foundations of life on earth. Everything and all of us are made up of these 5 elements. Consequently, they are an integral part of our way of cooking for thousands of years.

It is the alchemy between the elements and the ingredients that creates the sensory experience of food, a food for life and soul.

What represents food and cooking for me

Each culture has its own culinary specialties, characteristics that make it typical of this region. Recipes are passed down from generation to generation. They are inheritances that create culture.

Generally, we cook not only for ourselves but for our family, our friends. Cooking, for the hours spent to prepare delicious and meaningful meals, is a proof of love. It´s not surprising then that it is around a welcoming table that people gather and talk. It is a privileged time to be together, and for family and social ties to be renewed and strengthen.

It starts at the root: being in direct contact with fresh, whole-foods such as vegetables, fruits, fresh herbs, grains, legumes…

Shortly thereafter, the processing of these aliments begins, integrating and mixing them together with diverse spices, so that at the end you come up with your dream dish.

Further on, while you are immersed in the action, fully aware throughout the process; aside from being in direct connection with nature, in a much deeper way, you reconnect with yourself.

It is through the synergy of ingredients and nutritional properties that our body is being nourished. Also, it is the combination of foods and elements that enables us to create, innovate a thousand different recipes and turn for example water with flour into bread. The interaction of the air element with these two ingredients results in the process that is called natural fermentation.

We cannot deny that the industrial age, while producing food in larger-scale in order to attend the whole population, as well as bringing more choices and convenience to consumers, it also took us further and further away from nature, the living and health, by changing Fresh and whole foods into processed foods.

Cooking is therefore a choice of quality over quantity, natural over chemical and processed, nutrients over empty calories, fresh (alive) over long conservation (dead), dedication over ease, health over illness, feeling alive over a certain loss of references, integration over isolation …

Cooking after all is choosing life, it is an art, a symphony whose artist you are.
